Ingredients
2 boxes Boursin Garlic & Fine Herbs Cheese
1 tbs olive oil
1 large yellow onion, diced
3 lbs butternut squash, peeled, seeded and cubed
3 cloves garlic, minced
1 tbs fresh sage, diced
1/2 tsp fresh thyme, minced
1/2 cup coconut milk
3 cup vegetable broth
1 tsp kosher salt
1 tsp black ground pepper
Pumpkin seeds, for garnish
Fresh sage, for garnish
Directions

1. Heat oil in large pot over medium heat. Sauté onion and salt until soft.

 

2. Add squash and cook 5 minutes.

 

3. Add garlic, sage, thyme, and broth. Bring to boil, reduce heat, cover, and simmer for 30 minutes.

 

4. Add coconut milk, 1 box Boursin Garlic & Fine Herbs Cheese, salt, and pepper.

 

5. Blend soup in blender until smooth. Season to taste.

 

6. Serve topped with crumbled Boursin Garlic & Fine Herbs Cheese, pumpkin seeds, and sage.
